Baked Apple Chips
Fall Apple Dip - Recipe for the Week of 8/31/10

Apple Strudel Muffins (12 muffins)
2 c. flour
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 c. butter
1 c. sugar, 2 eggs
1 1/4 t. vanilla
1 1/2 c. chopped apples
1/3 c. packed brown sugar
1 T. flour
1/8 t. cinnamon
1 T. butter
Apple Strudel Muffins (12 muffins)
1. Preheat oven to 375 degrees.
2. In a medium bowl, mix flour, baking powder, baking soda and salt.
3. In a large bowl, beat together butter, sugar, and eggs until smooth. Mix in vanilla. Stir in apples and gradually blend in the flour mixture. Spoon the mixture into a prepared muffin pan.
4. In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs.
5. Bake 20 minutes in a preheated oven or until toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from the pan. Cool on a wire rack.
