Kale and Apple Salad
A light salad with thin strips of antioxidant rich kale with a crisp, juicy Honeycrisp apple.

Slivered almonds, toasted

Pecorino (Romano) cheese, grated
- Whisk together the lemon juice, olive oil and salt in a large bowl. Add the kale, toss to coat and let stand 10 minutes.
- Next cut the apple into matchsticks and sliver the dates. Add these to the kale.
- Add the almonds and cheese. Season with a little pepper as desired, and toss well.
