Day Old Apple Cider Donut Pudding with EverCrisp Apples

INGREDIENTS
12 Sunrise Orchards day old apple cider donuts - cut into 1" pieces
5 large eggs, room temperature
3 cups heavy cream
1 1/2 cups whole milk
1/2 teaspoon vanilla
1/4 cup light brown sugar + more for topping
1/4 cup granulated sugar
1/8 teaspoon salt
2 Sunrise Orchards EverCrisp apples chopped/diced
Powdered Sugar Glaze Ingredients:
1 cup powdered sugar
1–2 tablespoons milk (or water)
1/2 teaspoon vanilla extract (optional)
DIRECTIONS
Preheat oven to 350 degrees F.
Spray an 8 x 12 baking dish with cooking spray.
Whisk together the eggs, cream, milk, vanilla, cinnamon, salt, brown sugar, granulated sugar until combined and sugar has dissolved.
Tear the day old apple cider donuts into one inch pieces and place in the prepared baking dish. Toss with the chopped EverCrisp apples. Pour the custard over the apple cider donuts. Gently press down into the custard with a rubber spatula. Let the custard soak into the donuts for 15 minutes. Sprinkle the extra brown sugar on top.
Cover and bake for 30 minutes. Uncover and bake another 30 minutes or until the custard sets.
Powdered Sugar Glaze Directions:
Place powdered sugar in a bowl.
Add 1 tablespoon of milk and stir.
Add more milk a little at a time until the glaze reaches your desired consistency—smooth and pourable.
Add vanilla if using.
Drizzle over warm or cooled pudding. If the glaze gets too thin, add a little more powdered sugar. If too thick, add a little more milk.
Serve with whipped cream or vanilla ice cream. Best served warm!
